For the sour cherry eggnog muffins, mix the sugar with the margarine using a hand mixer until the mixture becomes creamy. Add a pinch of salt. Gently beat one egg at a time into the mixture. Sift together the flour and baking powder. Now alternately stir some of the flour mixture and the eggnog into the egg mixture until a creamy mixture is formed.

Preheat the oven to 180°C.

Chop the white chocolate into small pieces. Wash the sour cherries, remove the seeds and cut them into small pieces.

Now stir the chopped chocolate and the sour cherry pieces into the mixture.Place paper cups in a muffin tray and fill in the mixture. Bake the sour cherry eggnog muffins in the oven for about 20 minutes.

Preheat the oven to 175°C. Wash and pit fresh sour cherries to taste or strain and drain sour cherries. Coarsely chop the chocolate.

For the dough, mix margarine, sugar and salt until creamy. Stir in eggs one at a time, mix flour and baking powder and stir in alternately with eggnog. Finally, fold in chocolate.

Pour batter into paper sleeves (use double) or muffin tray and top with sour cherries. Bake for approx. 15 minutes and let cool.

Whip the cream with vanilla sugar until stiff, spread on the sour cherry eggnog muffins, decorate with chocolate flakes and eggnog and top with fresh sour cherries if desired.

Preparation Tip:

The sour cherry eggnog muffins will be especially pretty if you decorate them with melted chocolate before serving.
