Papadams – narrow patties made of lentil, long grain rice or potato flour – can be bought ready-made in Asian stores. They come in different flavors, including chili, pepper, garlic, but also unseasoned.
Oil mold, they should rise on the spot. Bake a few seconds on each side until golden, then quickly remove (be careful not to burn!), drain on paper towels and bring to the table on the spot.
