Try this delicious pasta dish:
Season calf’s liver with pepper, roast on both sides in clarified butter. Score the tomatoes crosswise, put them briefly in hot water, peel, core, quarter and steam in a little butter until soft. Fold in the coarsely chopped basil.
Slice spring leeks lengthwise, rinse and cut into small rings. SautĂ© in butter until soft, season with pepper. Finally, pour the whipped cream and cook everything together a little bit. Arrange the leek vegetables on a plate, place the calf’s liver on top and garnish with the basil tomatoes.
Recommended side dish: finger noodles, fried in a little butter.
you should soak them in milk for one night. This will make the liver mild and tender.
