Trout Fillets with Herb Potatoes

Debone trout fillets, season and flour. Steam cook potatoes, peel and cut into quarters. Fry trout in oil, turning and finishing after 5 minutes. Put them on plates. Turn the potatoes in the frying fat, salt and sprinkle with herbs. Serve the trout fillets with herb potatoes.
