Instructions:

Heat the butter and steam the onion and parsley for 10 minutes, turning constantly.

Finely chop the ham and put it in a suitable bowl, add the onion-parsley mixture, pepper, salt, mustard and cream and mix well.

Roll out the puff pastry and cut out triangles. Form the filling on the triangles and roll them up to the top. Place the croissants on a baking tray covered with parchment paper, brush well with beaten egg yolk and bake in a heated oven at 190 degrees for about 25 minutes until golden.

Serve hot or at least lukewarm with a colorful leaf salad.

Tip: Use your favorite ham – then your dish tastes twice as good!
