Beat the cutlets thinly, cut the edges if necessary, salt and pepper. Brush the surface with mustard and place slices of bacon on top. Cut pumpkin into thin pieces and place on the edge of the roulades with the gherkins. Roll up the roulades, fix them with metal skewers, toothpicks, staples or spaghetti. Turn the roulades in flour, heat oil in a pot, sear roulades on all sides and then remove. In the roasting residue, lightly fry onion, add flour, fry briefly. Pour in soup and immediately whisk until smooth, so that the flour lumps dissolve. Add roulades and steam covered on the stove, in the oven or in a pressure cooker for approx. 1.5 hours until tender.Remove roulades from sauce and keep warm. Strain the sauce, add the cream and boil down again. Then season to taste. If necessary, thicken with a little starch. Remove roulades from spaghetti or needles, arrange on plates and baste with sauce. Serve with noodles, mashed potatoes or spaetzle.
