Instructions:

For the carnival doughnuts, first prepare the dampfl. Put the flour in a bowl, make a small hollow and dissolve the yeast with a little sugar in the lukewarm milk. Stir in a little flour, then dust the mixture with flour and leave to rise in a warm place for about 30 minutes.

In the meantime, beat the yolks with the butter over steam. Mix in sugar, salt, rum and lemon zest. Knead this mixture with the steam to a smooth dough and let it rise again for about 10 minutes.
