For the pistachio mountains, preheat the oven to 150 °C top/bottom heat.

Beat the egg whites with a pinch of salt until stiff. Sift in the sugar and beat until the sugar has dissolved well. Then stir in the bitter almond flavoring and the pistachios.

Place small mounds of pistachios on a baking tray lined with baking paper using two teaspoons and dry at 150 °C for approx. 40-45 minutes.

Preparation Tip:

In the oven, the pistachio mountains still feel sticky. But if you let them cool, they become crunchy.
