Place the ingredients in the dough container of the breadmaker in the order recommended by the manufacturer. Select the program for white bread (browning level: medium) and press Start.

Roast the chillies:

Turn on the oven broiler. Cut the chili peppers in half lengthwise (cut poblano chilies lengthwise into three or four pieces). Remove the stems and seeds, avoiding touching the seeds and inner ribs if possible. Place the pieces, skin side up, on aluminum foil or the broiler pan and place in the oven 10 to 15 inches from the broiler. Roast the chilies until the skin blisters and is almost completely brown or black (it does not color evenly). Be careful not to burn the flesh. Remove from heat and place in a foil pouch form. Leave in the closed bag for about 10 min, then remove. Remove the skin and discard.

Cut the pulp into small pieces.

This extremely aromatic bread combines the good taste of cheddar and green chilies. If using fresh chili peppers, Anaheim chilies, Poblano green chilies or New Mexico chilies are best.
