Rinse and clean the spring onions and cut the light parts into pieces about 5 cm long. Cut the bacon into sticks about 3 cm long. Peel and finely dice the garlic. Season the rabbit legs with salt. Heat the clarified butter in a roasting pan. Fill in the rabbit legs and roast them at medium heat for about 35-40 minutes until crispy all over. 5 minutes before the end of roasting, add the white pepper, garlic and half of the butter. In the meantime, roast the bacon sticks in a frying pan over medium heat until crispy.

Next, add the remaining butter and the spring onions. Season with salt and sugar. Cover and sauté for about 6 minutes until soft. Bring the spring onion vegetables to the table with the rabbit legs in the roaster. It goes well with a kitchen herb mashed potatoes.
