For the Swedish apple pie, crumble flour, powdered sugar with butter. Add yolks and quickly knead into a dough. Leave to rest in a cool place for about 1/2 hour.
In the meantime, peel and slice the apples, mix with sugar and vanilla sugar and possibly cinnamon. Roll out the dough and place on a baking sheet lined with parchment paper. Spread with jam, bake in preheated oven (180° C) for about 18 minutes.
During the baking time, whip the egg whites and beat well with granulated sugar. Remove from the oven and heat the oven to 210°C. Cover the dough with the apple mixture.
Spread the wind mixture on top (you can use a jagged pastry card if necessary) and place back in the tube. Continue baking under supervision until the wind mixture is a nice color.
Let the Swedish apple pie cool a bit and serve.
