Instructions:

Blanch the pea pods briefly in salted water until firm to the bite and rinse in ice-cold water. Mix all ingredients for the marinade. For the apple-shallot cream, also mix all ingredients together. Mix the pea pods with the marinade. Season with salt and pepper and arrange in the middle of the plate. Place a fillet of matie on each. Drizzle the apple and shallot cream over the top and garnish with dill.
