Instructions:

For the horseradish pasta with smoked salmon pesto, grate the horseradish very finely and mix with the other ingredients for the pasta dough.

Add water gradually and knead until a smooth, compact dough is formed.

Wrap dough in plastic wrap and let rest at room temperature for 1 hour.

Then roll out with a rolling pin or pasta machine to a thickness of approx. 2 mm and cut narrow ribbon noodles from it.

Cook in boiling salted water for 2-3 minutes. Finely chop shallots and sauté in olive oil until translucent.

Add Soy Cuisine and simmer for 5 minutes. Cut salmon into small cubes and add to onion sauce with lemon juice.

Let it get hot but do not boil anymore. Season to taste with salt. Drain the pasta and mix with the pesto.

Serve the horseradish pasta with smoked salmon pesto sprinkled with dill.

Preparation Tip:

If the horseradish pasta with smoked salmon pesto is too spicy for you, make pasta without horseradish with the pesto.
